Apple Crisp (Gluten Free)

The ground rolled oats replace the need for flour to thicken
Ingredients

1 1/2 cups Rolled Oats
1/4 cup Brown sugar
1/8 tsp Salt
1 stick Butter ( I prefer the unsalted)

2 lbs Apples (Courtland are a good baking apple) about 5 -6 apples
1/4 cup Brown Sugar
1/4 cup Dried Cranberries
1/2 tsp Cinnamon

Instructions

Topping

  1. Pre heat oven to 375
  2. Divide the rolled oats into 2 parts (1 cup and 1/2 cup)
  3. In a food processor, chop 1/2 cup of rolled oats until coarsely ground.
  4. Combine these coarsely ground roll oats with whole rolled oats in a medium bowl
  5. Add the the brown sugar, butter and salt and mix together using a pastry cutter.

Filling

  1. Combine apples, brown sugar, cranberries, and cinnamon until apples are well coated with sugar and cinnamon
  2. Transfer to a large pie plate or 9 inch square baking pan
  3. Top with the topping mixture
  4. Cover with parchment paper lined tin foil and bake for s30 minutes
  5. Remove the tin foil and parchment paper and continue to bake for another 30 minutes
  6. Cool slightly but serve warm (with whipped cream or ice cream) and top with Crisp Apple Chips http://recipes.kenalger.ca/recipe/apple-chips/

    Ken and Judy had us over for dinner in Mont-Tremblant. This dessert he served was fantastic and we are definitely going to make it at home!
