Baked Sweet Potato Frites

Best option for fries - baked & not potatoes

2 Sweet Potatoes (I allow for 1/2 of one per person)
2 Tbsp Corn Starch
1/2 Tsp Ground Ginger
1/4 Tsp Chili Powder
3-4 Grinds Pepper
2-3 Grinds Salt (I prefer Himalayan)

  1. Pre heat oven to 425° F
  2. Slice the Sweet Potatoes length wise in 1/4 inch slices.   Then slice those cuts into frites about 1/4 inch as well.
  3. Whisk the ginger, chili powder, corn starch and oil in a large bowl until combined.   Add the frites and stir until all are coated.
  4. Place on a parchment lined baking sheet.   Trying to keep them separated so they roast well.
  5. Bake for 20 minutes, turn once after about 15 minutes.
