Baked Sweet Potato Frites
2 Sweet Potatoes (I allow for 1/2 of one per person)
2 Tbsp Corn Starch
1/2 Tsp Ground Ginger
1/4 Tsp Chili Powder
3-4 Grinds Pepper
2-3 Grinds Salt (I prefer Himalayan)
- Pre heat oven to 425° F
- Slice the Sweet Potatoes length wise in 1/4 inch slices. Then slice those cuts into frites about 1/4 inch as well.
- Whisk the ginger, chili powder, corn starch and oil in a large bowl until combined. Add the frites and stir until all are coated.
- Place on a parchment lined baking sheet. Trying to keep them separated so they roast well.
- Bake for 20 minutes, turn once after about 15 minutes.
