Brie & Prosciutto Artisan Pizza

no need for take out!

2 pcs Flat bread
4 Tbsp Fig Jam / Fig Compote
4-6 Slices Brie Cheese (from a large round)
2-3 Slices Prosciutto (ribboned)
1 Portobello Mushroom (sliced )
1/2 Cup Mozzarella (shredded)
1/2 Cup Caramelized Onions
4-6 Mint Leaves (rolled and cut - to make ribbons)

  1. Choose enough pieces of flat bread for each person (1 per person is usually good)
  2. Spread the Fig Compote over the flat bread.   If the compote is to thick, thin it slightly with balsamic vinegar or apple juice
  3. Lay the sliced brie (start from the centre of the round) to cover the flat bread spacing them about 1/4 inch apart to allow for melting.
  4. Add the prosciutto on top of the brie, then the Portobello slices
  5. Cover with Mozzarello
  6. Top with Caramelized Onions
  7. Add the mint leaves on top
  8. Bake on the oven racks for 12 minutes @ 375° F
