Mom’s Chocolate Cookies

A word from the cook
one of the 1st memories I have of baking with my Mom. Thanks for the many inspirations Mom.

2 Cups White Sugar
1/2 Cup Milk
1/2 Cup Butter
3 Cups Quick Cooking Rolled Oats
1 Cup Coconut (flaked)
6 Tbsp Cocoa
1/2 Tsp Vanilla extract

  1. Combine the sugar, butter and milk in a large saucepan, bring to a boil while stirring.
  2. Remove from heat and add the remaining ingredients (all at once).
  3. Using 2 spoons, drop onto parchment paper; forming to desired size of cookies.
  4. Let stand for about 1 hour to cool and set.

    This is a recipe that my Mom made many times at our request and was one that she involved each of us (myself, Irene and Donna) in our 1st foray into baking. These cookies are not only awesome, they bring back many memories – Love you Mom.
