Tomato Pesto Chicken

Quick and Worth it!

4 Boneless / Skinless Chicken Breasts
1/2 Cup Pesto
1 Large Tomato
1 Cup Grated (or shaved) Parmesan Cheese
2 Cloves Garlic
Fresh Ground Black Pepper

  1. Pre-heat oven to 400°
  2. Cut the chicken breasts in half and pound to flatten.
  3. Mix the chopped Garlic with the Pesto.
  4. Cover each piece of chicken with pesto/garlic mix (about 1 Tbsp on each)
  5. Top the pesto with 1 slice of tomato
  6. Cover with parmesan cheese
  7. Grind the pepper on top.
  8. Bake in a glass baking dish (uncovered) for 30 minutes

    I’d prefer to make my own pesto, but in a pinch and/or out of season, a store bought pesto does a pretty darn good job!
